I’m on a Pumpkin Roll and want to share this with you. Making good use of the canned pumpkin puree.

Pumpkin Pie Overnight Oatmeal for two (pictured for one and I added some seeds and sliced apricot to add a little colour and additional texture)

¼ cup Protein Shake Mix (I use a pumpkin spice flavour) otherwise just add pie spices to vanilla

3 tbsp organic canned pumpkin puree

½ cup unsweetened vanilla almond milk ( I used original almond milk and added 1tsp of vanilla)

¼ cup plain yogurt

1 cup old fashioned oats

1 tbsp maple syrup (or agave)

¼ tsp ground cinnamon

Dash of salt

Directions:

In a small bowl, mix the pumpkin puree, almond milk and yogurt together. Add remaining ingredients and stir to combine. Divide between 2 small bowls or mugs; then cover and refrigerate overnight (or for at least an hour). Top with syrup or chopped pecans if desired. Enjoy cold, or microwave for 30–60 seconds to enjoy warm!
