I’m on a Pumpkin Roll and want to share this with you. Making good use of the canned pumpkin puree.
Pumpkin Pie Overnight Oatmeal for two (pictured for one and I added some seeds and sliced apricot to add a little colour and additional texture)
¼ cup Protein Shake Mix (I use a pumpkin spice flavour) otherwise just add pie spices to vanilla
3 tbsp organic canned pumpkin puree
½ cup unsweetened vanilla almond milk ( I used original almond milk and added 1tsp of vanilla)
¼ cup plain yogurt
1 cup old fashioned oats
1 tbsp maple syrup (or agave)
¼ tsp ground cinnamon
Dash of salt
In a small bowl, mix the pumpkin puree, almond milk and yogurt together. Add remaining ingredients and stir to combine. Divide between 2 small bowls or mugs; then cover and refrigerate overnight (or for at least an hour). Top with syrup or chopped pecans if desired. Enjoy cold, or microwave for 30–60 seconds to enjoy warm!
Sometimes, life hands us a twist that changes of way of being forever. Finding a new way can be a challenge, but, I prefer to look at it as a new journey or adventure.
For me, keeping a positive attitude (or at least trying to) has been my saving grace. I recognize that some of you may be thinking that this mindset is harder to achieve than said. At times, I would agree it absolutely is. Those are the moments and situations that I fight harder to stay away from as they have consumed me all too easily in the past.
The most recent twist.. a heart attack.. literally and physically set me down. My new journey is completely focused on maintaining wellness which includes a healthy dose of laughter.
I am a 62 year old mother of two grown girls who have been my rocks the reason for positive attitude. They were the strength behind me even when I questioned if I could handle any more.
I have been blessed with three grandchildren who make me laugh and give the best hugs. Laughter should not be ignored or avoided... it truly is the best medicine.
The reason behind my focus is to be here on earth, healthy, happy and fit. I want to outlive my parents short 77 years and far beyond. It is all about giggling and aging gracefully, all the way.
I will be sharing information I find along the way that includes tricks and tips to gain and maintain a positive attitude. But more importantly this will be documentation of my life whenever I can journey. Sometimes it will be the sharing of laughing at myself, but mostly about Eema having laughs with Jack, Halen, Jordan..
But now… step one of this journey… first learn the ins and outs of writing and posting for the joy of sharing with others because everyone should learn to be the best version of themselves... even if you do not know what that is....I am still a work in progress.… LATW (laughing all the way- my ode to everything Santa)… it’s going to be great!!
